Most natural, raw honey will crystallize, go solid or semi-solid. This is known as granulated or crystallized honey. It has not gone bad! The wonderful thing about good quality honey is that it never spoils – honey over 2000 years old has been removed from the Egyptian Pyramids and was still edible! Granulation is natural. It happens when glucose, one of three main sugars in honey, precipitates out of the supersaturated honey solution. The glucose loses water and takes the form of crystals. These crystals then form a lattice which immobilizes other components of honey in a suspension and so creating the semi-solid state.

Why we can not sell our honey cheaper?

1. We do not mix this honey with other cheap ingredients in order to bulk up the honey. This is pure honey. There are no additional ingredients.

2. We do not heat our honey in order to extract it more easily. Yes, we spend more time and energy manually extracting the honey- because we want to keep our honey raw with those amazing health benefits. You can read about those benefits below.

3. We do not filter our honey. So this honey has natural bee pollen, micro pieces of propolis and bee wax, all of which benefit your health.

4. We do not use our bees for commercial pollination. Our bee farm is located in a wild place, so our honey does not have any pesticides or herbicides or other harmful chemicals.

5. Any real beekeeper will tell you how much work is required with bees to get each jar of honey. If you have bees, then you just work, work and work.

6. We do not use any chemicals in order kill pests found in the hives, nor do we use chemicals in the winter time in order to help the bees survive until spring. If you do your research you will find that 90% of beekeepers use chemicals on bees.

For centuries, honey has been used for everything from sweetening foods and drinks to treating and healing our bodies. You get the most benefits from honey when it is used natural - which means raw and in pure, organic form - straight from the hive. Raw honey simply tastes better and is more potent.

Honey is considered one of nature's purest foods. It's a natural antioxidant, contains 22 amino acids, 27 minerals and 5,000 enzymes. Organic honey can help keep you healthy by boosting the immune system, fighting disease and treating a wide range of health problems from coughs and colds to digestion problems, arthritis and allergies.

Other health benefits that come from using raw organic honey is a very sweet list:

Anty-Cancer activities of Raw Honey

Honey is known for centuries for its medicinal and health-promoting properties. It contains various kinds of phytochemicals with high phenolic and flavonoid content which contribute to its high antioxidant activity. Agent that has strong antioxidant property may have the potential to prevent the development of cancer as free radicals and oxidative stress play a significant role in inducing the formation of cancers. Phytochemicals available in honey could be narrowed down into phenolic acids and polyphenols. Variants of polyphenols in honey were reported to have anti proliferative property against several types of cancer.

Weight Loss

Though honey has more calories than sugar, honey when consumed with warm water helps in digesting the fat stored in your body. Similarly honey and lemon juice and honey and cinnamon help in reducing weight. Read more about benefits of honey in weight loss.

The latest theory based on the hibernation diet also builds a link between fructose-rich honey and weight loss. It suggests taking a generous spoonful or two of honey at night, either as a warm drink or straight from the jar, and promises to help us sleep and lose weight at the same time by fueling the liver, speeding up fat-burning metabolism and easing stress hormones. And if you are considering artificial sugar or sweetener like Aspartame to help you lose weight, you are putting yourself completely on the wrong track. It might get you off from a few calories but it gives you a bunch of other serious health problems.

Improving Athletic Performance

Recent research has shown that honey is an excellent ergogenic aid and helps in boosting the performance of athletes. Honey facilitates in maintaining blood sugar levels, muscle recuperation and glycogen restoration after a workout.

Energy Source

According to USDA, honey contains about 64 calories per tablespoon. Hence honey is also used by many as a source of energy. On the other hand, one tablespoon of sugar will give you about 15 calories. Further the carbohydrates in the honey can be easily converted into glucose by even the most sensitive stomachs. Hence it is very easy to digest honey.

Sweetener

Sugar can be substituted with honey in many food and drinks. Honey contains about 69% glucose and fructose enabling it to be used as a sweetener.

Source of Vitamins and Minerals

Honey contains a variety of vitamins and minerals. The type of vitamins and minerals and their quantity depends on the type of flowers used for apiculture. Commonly, honey contains Vitamin C, Calcium and Iron. Check for the vitamin and mineral content in sugar from any source, you will find it to be either nil or miniscule.

Antibacterial and Antifungal Properties

Honey has anti-bacterial and anti-fungal properties and hence it can be used as a natural antiseptic.

Antioxidants

Honey contains nutraceuticals, which are effective in removing free radicals from our body. As a result, our body immunity is improved.

Our Honey is probably one of the finest honey available!

It is a totally unprocessed whole food, that is never heated or filtered.

Our Honey contains all nutrients including vitamins, enzymes and trace minerals the bee's put into it.

Each jar has pollen and propolis.

This Honey has a completely unique taste and texture which is just out of this world, unlike any other honey on the market.

Instead in the supermarkets we're being sold a pale imitation of natural honey - with most of the goodness processed out. For instance, out of over 30 different honeys I counted at my local store yesterday only one was raw and would have contained all these compounds. At other supermarkets and even a health food shop there was no raw honey. Almost all honey in stores that labeled "raw" is not raw. Yet most shoppers aren't aware of this because the choice available at supermarkets seems so big, and the discerning shopper may think that the organic honey is equivalent to raw honey.

If you really want natural honey, with all the natural benefits, you're faced with a problem. Whether you or I like it or not the big honey producers are emasculating one of the finest natural substances known to man - and we're not even being given the choice of buying it in its natural unprocessed form in most stores.

More than 90 % of the honey sold in US grocery stores is not exactly what the bees produce.
